Babergh District Council has published the sixth issue of Foodwise, its newsletter for local food businesses.  The issue gives a sneak preview of ‘Safer Food, Better Business’ – a pack which has been produced by the Food Standards Agency designed to help smaller businesses comply with new food hygiene regulations.

“This pack is a really good innovation and will be invaluable to the majority of food businesses who do not have the in-house expertise to prepare the documentation required under the  new Food Hygiene Regulations which come into force on the 1st of January next year” said Emma Richbell, Technical Officer (Commercial) for Babergh District Council.  “The pack covers the ‘4Cs’ – cooking, cleaning, chilling and cross-contamination as well as helpful information for managers.  There is also a diary which has been designed to make daily record keeping as simple of possible” added Emma.

The sixth issue of FoodWise, which is distributed to each of Babergh’s approximately 850 food handling businesses, also provides guidance on hand washing, the theme of National Food Safety Week 2005.   With  anything from 2 million to 10 million bacteria from fingertip to elbow, thorough hand cleansing is imperative for anyone involved in handling food.   Alarmingly, areas not often washed effectively include the fingernails, between fingers, thumbs, backs of hands and wrists.

“It is estimated that 4.5 million people suffer food-borne illness in the UK each year - that's 1 in 10 people. FoodWise exists to provide food businesses with timely and accurate information and advice.  As such it aims to help promote best practice in food hygiene and to ensure that Babergh’s food businesses are amongst the safest in the country” concluded Ms Richbell.
